Apple Coconut Bars (Nut free, Paleo, Vegan, Raw)

I’ve decided to go on the AIP diet for a month because lately I’ve noticed I don’t feel great after eating eggs or nut butters. AIP is a more strict version of the paleo diet that’s specifically for autoimmune disease. It is a lot like the GAPS and it is meant to heal the gut and digestive issues. On AIP you can’t eat nuts, eggs, dairy (except ghee), refined sugar, grains, legumes, and nightshade veggies. I am on day four and already feeling better! I’m in love with these delicious no bake apple coconut bars. They  are an easy and filling snack to grab when I need something fast. Plus they only have 5 ingredients!  Fats are important on this diet, and these bars have a lot of healthy coconut oil in them!

Apple Coconut Bars (Nut free, Paleo, Vegan)
 
Ingredients
  • 1½ cups unsweetened shredded coconut
  • ¼ cup plus 2 tablespoons extra virgin coconut oil, melted
  • ¼ cup plus 2 tablespoons dried apple rings, diced small
  • 2 tablespoons maple syrup or raw honey
  • ½ teaspoon cinnamon
  • ⅛ teaspoon sea salt
Instructions
  1. Blend everything in a food processor or blender, except the dried apples.
  2. Add the apples and mix again.
  3. Press into a small, greased baking dish.
  4. Refrigerate for an hour or freeze for 15 minutes, then cut into bars.

  1. These look great! I was thinking I could share some at work when I saw your labels, but after reading, I’ll have to” hog” them. My vegan co-worker says honey is NOT vegan.
