Roasted Cauliflower & Kale Salad w/ Maple Dressing

This has my new favorite salad lately. I love the roasted cauliflower! Anything roasted is amazing because it gives it that slightly charred flavor. The best part of this recipe is this dressing. Oh my, it’s good! It would taste great with any salad. I love kale because it doesn’t get soggy like other lettuces, so  I just make a big bowl of this and eat it for lunch a few days in a row.

Roasted Cauliflower & Kale Salad w/ Maple Dressing

1 bunch of kale, stems removed

1/2 a small head of cauliflower

1 tablespoon olive oil

1/2 cup roasted almonds, chopped

1/2 cup blueberries

2 tablespoons shredded parmesan (optional)


1/4 cup extra virgin olive oil

2 tablespoon fresh squeezed lemon juice

1 1/2 tablespoons pure maple syrup

1 tablespoon apple cider vinegar

salt and pepper


– Chop up the cauliflower onto a baking sheet. Pour the olive oil over it and sprinkle with salt and pepper. Bake at 425 for about 20 minutes, or until soft and slightly brown.

-Chop up the kale and place in large bowl, along with the almonds, blueberries and parmesan (if using).

-Stir together the dressing in a small bowl, then pour over the salad and stir until it’s combined.

-Add the roasted cauliflower, and serve it up!
