Chicken Sausage & Kale Crustless Quiche (Dairy Free, Paleo)

My husband and I are on our fourth week of a Whole30, which is a 30 day challenge of eating only meats, vegetables, fruits and nuts. It has been hard but planning ahead and preparing meals in batches has made it so much easier! Every week I make a casserole like this for breakfast. I love nutritional yeast and have been adding it to almost everything to mock that cheesy taste. This casserole is super easy, filling and tastes great!

Chicken Sausage & Kale Crustless Quiche
  • 3 chicken sausage links, chopped into bite size pieces
  • 11 or 12 eggs
  • 1 head of cauliflower, steamed until soft
  • 2-3 cups of kale, removed from stems and chopped
  • 2 tablespoons nutritional yeast (optional)
  • salt and pepper
  • 1 teaspoons minced garlic
  • onion salt
  1. Steam cauliflower on stove until soft.
  2. While its cooking, add eggs to a large bowl and whisk.
  3. Add in the rest of the ingredients, and stir.
  4. Spread steamed cauliflower onto a 13x9 baking dish.
  5. Pour the rest of the ingredients on top and bake at 350 for about 30 minutes, or until eggs are firm.
