Paleo Zucchini Pancakes

Like most toddlers, my son Jonathan is a picky eater. So I’ve been searching for easy and healthy recipes and ways to sneak veggies into his food. I adapted this recipe from the wonderful, kid-friendly, paleo cookbook Eat Like a Dinosaur. The batter seemed a little runny so I added some almond flour and it turned out great. This recipe is a home run and both of my kids loved them!

Paleo Zucchini Pancakes
 
Ingredients
  • 2 medium zucchini
  • 1 organic egg
  • ½ cup almond flour
  • ½ tablespoon raw honey
  • 1 teaspoon cinnamon
  • ¼ teaspoon pure vanilla extract
  • salt and pepper
Instructions
  1. Peel zucchini and then shred in food processor.
  2. Pour into strainer, sprinkle on salt and let sit for 20 minutes.
  3. Put into thin dish towel and squeeze as much liquid out as possible.
  4. Put in a bowl with all the rest of the ingredients and stir until combined.
  5. Heat butter or coconut oil in a skillet over medium heat.
  6. Using a tablespoon, spoon pancakes into heated skillet and let cook for about 4 minutes per side or until light brown.
  7. Makes 9-10 zucchini pancakes.
