Easy Beef and Avocado Dinner Recipe (Dairy Free, Gluten Free)


This has become a favorite around here because it’s so quick and easy to put together. I love recipes like this that are uncomplicated and use ingredients that we usually have on hand. My husband and daughter like to mash the avocado into the beef and then scoop it onto the chips.. I usually eat it without the chips and it’s still yummy and filling. Sometimes I also add salsa to mine. Enjoy!
Easy Beef and Avocado Dinner Recipe(Dairy Free, Gluten Free)

Ingredients
  • 1 pound of grass fed beef
  • 1 medium onion
  • 1 jar of black beans, drained and rinsed
  • 2 avocados
  • tortilla chips (optional)
  • salt and pepper
Instructions
  1. Dice the onion and saute over medium heat for a few minutes.
  2. Add in the ground beef, salt and pepper and continue cooking with spatula.
  3. Right before the beef is browned, add in the black beans to warm them.
  4. Serve with sliced avocado and tortilla chips.
