Apple Cinnamon Muffins

Things have been so busy the past few weeks trying to get the house sold, so I’ve been trying out alot of recipes from other blogs I love instead of testing my own. I’ve tried Elana’s banana cake and her pumpkin bread, and both are amazing! I actually made the pumpkin bread recipe three times recently, and my toddler and I have been enjoying it for breakfast every day. It’s a perfect healthy recipe for the fall! I found this muffin recipe at PaleOMG, and she has alot of great recipes on her site. I only made a couple changes, and these muffins are sooo good! Also I added a dairy free oat topping, which I know isn’t paleo, but at the time I was eating gluten free oats and thought it would make these muffins even more yummy. I made half with the topping and half without, and they are delicious either way!

Apple Cinnamon Muffins

Serves: 9-10
  • 1 apple, diced
  • 1 cup almond flour
  • 2 tablespoons coconut flour
  • 3 eggs
  • ¼ cup plus 1 tablespoon light olive oil, or coconut oil
  • 2 tablespoons xylitol
  • pinch of stevia
  • ½ teaspoon baking soda
  • 2 teaspoons cinnamon
  • 2 teaspoons vanilla extract
  • Optional oat topping:
  • ¼ cup gluten free oats
  • 2 tablespoons coconut sugar
  • 1 teaspoon cinnamon
  • 2 tablespoons light olive oil
  1. Preheat to 350.
  2. Add dry ingredients to a medium bowl and mix.
  3. In a separate bowl, whisk together the eggs, vanilla, oil and apple.
  4. Combine the dry and wet ingredients.
  5. Pour into muffin tin.
  6. If you're adding the oat topping, drop about a tablespoon on top of each muffin.
  7. Bake for 25-30 minutes.
