Molasses Spice Cake (Free of grain, dairy and refined sugar)

The texture and flavor of this cake is just amazing! I was inspired to make this because I’ve been needing extra iron lately so I’ve been taking blackstrap molasses by the spoon. Did you know that one tablespoon of molasses has as much iron as 3 ounces of beef? You can read here about all of the benefits of this healthy sweetener. Anyways, I thought it would taste much better in cake form-and I was right! And I love that this cake is moist without needing any oil. For the liquid I used raspberry leaf tea, but water would work fine too. I just love the taste of that tea and it’s great for female hormone balance.

Ingredients
  • ¾ cup plus 1 tbsp almond flour
  • 2 tbsp light buckwheat flour
  • 1 tbsp coconut flour
  • 1 tsp baking soda
  • ¼ tsp ginger
  • ¼ tsp cinnamon
  • 1 egg
  • 2 tbsp blackstrap molasses
  • 2 tbsp xylitol
  • ¼ cup warm raspberry leaf tea, or warm water
Instructions
  1. Preheat oven to 350.
  2. Mix together the dry ingredients.
  3. Blend together the egg, xylitol and molasses.
  4. Add the dry ingredients to the wet, alternating with the warm tea, until it's all combined.
  5. Bake for about 20 minutes in a greased 9 x 9 baking dish.
