Gluten Free Chocolate Chip Oatmeal Cookies

Lately I have been experimenting with some new gluten free flours, such as tapioca starch, sorghum flour, teff etc. I am still completely loyal to almond and coconut flours, but I am finding that mixing them with other gluten free flours can yield great results.  Adding a small amount of sorghum flour mixed with some tapioca starch helps to create a wonderful, chewy texture and a crumblike crust around the edge of the cookie. I have not been able to achieve this by using almond flour alone. You don’t need to add alot of butter/oil to these cookies because almond flour is very moist.  Xantham gum is a binding agent and is really needed here to keep the cookies from falling apart. You could make your own sugar free chocolate chips, or use raisins, or skip it altogether and just make some delicious oatmal cookies. I used  these grain sweetened chocolate chips.  Not only are these cookies delicous and satisfying, but they are also loaded with protein, fiber and healthy fats. I gave one to my 15 month old daughter for a snack and she  LOVED it!

Gluten Free Chocolate Chip Oatmeal Cookies

Ingredients
  • 1¼ cups gluten free oats
  • ½ cup almond flour
  • ¼ cup tapioca starch
  • 2 tablespoons sorghum flour
  • ½ teaspoon baking powder
  • ¼ teaspoon baking soda
  • ½ teaspoon xantham gum
  • ¼ teaspoon cinnamon
  • 2 tablespoons organic butter, softened
  • 1 large organic egg
  • ½ tablespoon vanilla extract
  • ½ cup xylitol
  • pinch of stevia
  • ¼ teaspoon honey (optional)
  • ½ cup sugar free chocolate chips
Instructions
  1. Preheat oven to 350 degrees.
  2. In medium bowl, mix all of the dry ingredients together (except the oats).
  3. In large bowl, blend together the butter, vanilla, xylitol, stevia, egg and honey (if using).
  4. Blend the dry ingredients into the wet until combined.
  5. Fold in the chocolate chips and oats.
  6. Form balls of dough and flatten them slightly onto a greased baking sheet.
  7. Makes about 12 medium cookies.
