Strawberry Muffins with Strawberry Cream Cheese Glaze


About 2 net carbs per muffin!

I came across this wonderful recipe at a blog called Just Making Noise, and had to make them! Unfortunately, I can’t take credit for this delicious recipe, but I did make a few changes. Of course I used xylitol instead of honey and I pureed the strawberries instead of chopping them. The strawberry cream cheese glaze poured on top makes these muffins soo heavenly!

Strawberry Muffins with Strawberry Cream Cheese Glaze

  • For the Muffins:
  • ½ cup coconut flour
  • ½ teaspoon sea salt
  • ½ teaspoon baking soda
  • 6 eggs
  • ⅓ cup xylitol
  • ⅓ cup oil
  • 1 teaspoon vanilla extract
  • 1 cup strawberries, pureed
  • For the glaze:
  • 1 cup strawberries, pureed
  • 1 cup cream cheese, softened
  • 2- 3 tablespoons powdered xylitol
  1. Preheat oven to 350 degrees.
  2. Butter a muffin tin liberally.
  3. In a medium bowl, whisk together the coconut flour, salt and baking soda.
  4. In a separate bowl, cream the eggs, xylitol, vanilla and oil together.
  5. Blend the dry ingredients into the wet until combined; mix in pureed strawberries.
  6. Pour filling into muffin tin about half way full.
  7. Bake for 18-20 minutes, or until toothpick inserted comes out clean.
  8. Makes about 12 muffins.
  9. For the glaze, blend together all three ingredients until combined.
  10. Pour over the baked muffins.
