I came across this wonderful recipe at a blog called Just Making Noise, and had to make them! Unfortunately, I can’t take credit for this delicious recipe, but I did make a few changes. Of course I used xylitol instead of honey and I pureed the strawberries instead of chopping them. The strawberry cream cheese glaze poured on top makes these muffins soo heavenly!

Ingredients
- For the Muffins:
- 1/2 cup coconut flour
- 1/2 teaspoon sea salt
- 1/2 teaspoon baking soda
- 6 eggs
- 1/3 cup xylitol
- 1/3 cup oil
- 1 teaspoon vanilla extract
- 1 cup strawberries, pureed
- For the glaze:
- 1 cup strawberries, pureed
- 1 cup cream cheese, softened
- 2- 3 tablespoons powdered xylitol
Instructions
- Preheat oven to 350 degrees.
- Butter a muffin tin liberally.
- In a medium bowl, whisk together the coconut flour, salt and baking soda.
- In a separate bowl, cream the eggs, xylitol, vanilla and oil together.
- Blend the dry ingredients into the wet until combined; mix in pureed strawberries.
- Pour filling into muffin tin about half way full.
- Bake for 18-20 minutes, or until toothpick inserted comes out clean.
- Makes about 12 muffins.
- For the glaze, blend together all three ingredients until combined.
- Pour over the baked muffins.
