Low Carb No Bake Cookies

Only 3 net carbs per cookie!

These amazing cookies are rich, satisfying and so easy to make! I used heavy cream because I like the richness, but you could use low fat half & half to cut back on calories.

Ingredients
  • ¼ cup gluten free oats
  • ¼ cup almond flour
  • ¼ cup heavy cream
  • 2 tablespoons unsweetened shredded coconut
  • 2 tablespoons natural peanut butter
  • 1 tablespoon butter
  • 1 tablespoon cocoa powder
  • ⅓ cup xylitol
  • 1/16 teaspoon or a pinch NuStevia
  • ¼ teaspoon vanilla extract
Instructions
  1. Bring the butter, xylitol, cream and cocoa to a boil in a small saucepan; boil for 1 minute, stirring constantly.
  2. Stir in the peanut butter until well combined.
  3. Stir in the remaining ingredients.
  4. Drop by tablespoonfuls onto a baking sheet lined with wax paper.
  5. Chill or freeze until firm.
  6. Makes about 10 regular sized cookies.
