Low Carb Vanilla Wafers

Only .7 net carbs per wafer

This is my low carb, sugar free, gluten frree version of delicious vanilla wafers! They don’t get crispy like regular wafers, but they taste very similar! If you want, you could replace the oat flour with more almond flour. You could also try replacing it with flaxseed meal or buckwheat flour, although this might alter the taste and texture of the cookies.

  • 1 cup almond flour
  • ¼ cup gluten free oat flour
  • 2 large eggs
  • ⅓ cup xylitol
  • ⅛ tsp nustevia
  • 2 teaspoons vanilla extract
  • 1 teaspoon grated lemon zest
  • ¼ teaspoon xantham gum
  • ¼ teaspoon baking powder
  • 3 tablespoons melted butter
  1. Preheat oven to 375 degrees.
  2. Line 2 large baking sheets with parchment paper, silicone pads or lightly grease.
  3. Combine eggs, xylitol and nustevia in a large mixing bowl and beat on high until creamy, about 2 minutes.
  4. Beat in the vanilla and lemon zest until combined.
  5. In a separate bowl, whisk together the oat flour, almond flour and baking powder.
  6. Blend the dry ingredients into the wet until combined.
  7. Add the melted butter into the mixture and beat until combined.
  8. Stir in the xantham gum with a fork.
  9. Drop dough by leveled, rounded teaspoons on prepared baking sheets; you should have about 42 small cookies.
  10. Bake in preheated oven for about 10-12 minutes or until the cookies are golden brown.
  11. Let cool for at least 15 minutes.
