Chocolate Peanut Butter Bars

This has got to be my new favorite sugar free, gluten free recipe remake! I love the rich topping of peanut butter and chocolate and the chewy cookie part on the bottom. It took me a couple tries to figure out the right amount of sweetener for the chocolate. The chocolate part is more of a dark chocolate than a milk chocolate. These taste amazing and have about 30 net carbs less per bar than the regular thing!

  • For the bars:
  • ¼ cup melted butter or oil
  • ½ cup gluten free oats
  • 1 cup almond flour
  • ½ tablespoon vanilla extract
  • ¼ cup xylitol
  • ⅛ teaspoon NuStevia
  • For the chocolate peanut butter topping:
  • 2 ounces unsweetened chocolate, chopped in small pieces
  • 2½ tablespoons xylitol
  • ⅛ teaspoon NuStevia
  • 1½ tablespoons unsalted butter
  • ⅓ cup creamy natural peanut butter
  • 1tablespoon low fat half and half
  1. Preheat the oven to 400 degrees.
  2. In a medium bowl, mix together all the ingredients for the bars until a dough is formed.
  3. Press the dough into a greased 9 x 9 inch baking dish and bake for about 10 minutes.
  4. While that's cooling, powder the xylitol in a coffee grinder for about a minute.
  5. Let settle for a minute before removing the lid.
  6. Melt the chocolate and butter in the microwave for about 30 seconds.
  7. Stir and continue microwaving in 15 second intervals until completely melted.
  8. Stir in the powdered xylitol, nustevia, half & half and peanut butter.
  9. Pour over the bars and even it out with a spatula.
  10. Let it set in the fridge until chocolate is hardened.
  11. Slice into 9 bars.

    May I ask how many carbs in these? You say 30 less than the usual recipe, but I try my hardest to log things! My god they look delicious.
