Low Fat Spinach Artichoke Dip

This is a delicious, low fat version of a classic dip! I served it last night for my husband’s birthday party and it was gone pretty fast. This dip has about 3 net carbs per serving. I like to eat this dip with vegetables instead of chips, but I served it with both since most people prefer chips.

  • 1 cup reduced fat shredded parmesan cheese
  • 1 cup fat free shredded mozzerella cheese
  • 10 ounce bag frozen spinach
  • 14 oz jar artichoke hearts, drained and chopped
  • 8 oz reduced fat cream cheese, softened
  • ¾ cup light sour cream
  • 2 teaspoons minced garlic
  1. Preheat oven to 375 degrees.
  2. Saute the spinach with a little bit of water over medium heat until thawed out.
  3. Pour into a strainer and push out the liquid with the back of a spoon.
  4. In a large baking dish, mix together all the ingredients.
  5. Bake for 20-30 minutes; serve hot.
