Coffee Cake

Since there aren’t many options for low carb breakfast food,  I usually just eat two eggs in the morning. That certainly gets old! Today I woke up craving something sweet and wanted something different. This recipe is isnpired by another Ina Garten recipe. This coffee cake is so moist, delicious, and easy to make! I ate three slices and had to stop myself from eating more!

  • ¼ cup coconut flour
  • ¼ cup grapeseed or light olive oil
  • ¼ cup xylitol
  • ¼ cup light sour cream or plain yogurt
  • ¼ teaspoon salt
  • ½ teaspoon baking soda
  • ½ tablespoon vanilla extract
  • 3 large eggs
  • 2 tablespoons almond flour
  • 1 tablespoon xylitol
  • ½ tablespoon cold butter
  • ¼ teaspoon cinnamon
  • pinch of salt
  1. Preheat oven to 350 degrees.
  2. For the cake, combine coconut flour, salt and baking soda in a small bowl.
  3. In a medium bowl, blend eggs, oil, ¼ cup xylitol and vanilla.
  4. Blend dry ingredients into wet, then stir in sour cream.
  5. Pour into a greased loaf pan.
  6. For the crumb topping, mix the last five ingredients together to form pea-like chunks.
  7. Crumble the topping over the batter and bake for 33-35 minutes.
  8. Let cool for at least 15 minutes, then slice into 8 pieces.
This recipe can easily be doubled to make bigger slices of cake.


Only 2.6 net carbs per slice!

  1. This looks lovely but didn’t work for me. It was undercooked and the topping fell to the bottom of the cake. I followed the recipe to the tee. What went wrong?

    • I’m so sorry it didn’t work out for you! I made this the other day and realized that the amount of topping I wrote in the recipe was more than I actually use.. if you use too much crumb topping for this amount of cake batter I believe it will be too heavy and sink to the bottom. It should bake down into the cake some but not all the way to the bottom. Thanks for bringing this to my attention so I can adjust the topping in the recipe! All ovens are different, but mine turns out perfect when I bake it in a regular sized loaf pan at 35 minutes. I hope you try again… I promise this recipe is delicious when it comes out how it should!
