Easy Avocado Salad

Lately, I eat this salad almost every day for lunch. Every week I buy a couple packages of Earthbound Farm Organic, prewashed lettuce. Any variety is good but I usually get the half spring mix and half baby spinach. I can get about 3 or 4 big salads out of each package.  It definitely saves time to buy lettuce that way and skip the rinsing, drying, and cutting part of making a salad. Since vinegar is not allowed during the candida cleanse, a simple dressing of olive oil and lemon juice has become my favorite. Obviously, you can change the measurements in this recipe or add any vegetables that you want.  This salad is healthy, filling and delicious!

Easy Avocado Salad

  • 2 cups organic, prewashed mixed greens
  • ½ of a roma tomato
  • ½ of an avocado
  • ⅛ cup chopped pecans or walnuts
  • 1 teaspoon lemon juice
  • 2 tablespoons extra virgin olive oil
  • dash of sea salt
  1. Place the lettuce on a large dinner plate.
  2. Chop the tomato and avocado; add to lettuce.
  3. Sprinkle the nuts onto the salad.
  4. Drizzle on the olive oil and a few squeezes of fresh lemon juice.
  5. Add salt to taste.
