Low Carb Broccoli Quiche

Only 3 net carbs per serving!

My sweet and thoughtful Aunt Karen shared some of her favorite low carb recipes with me. She’s so cute because she even put them in a pretty pink folder with a typed letter at the front. I want to try them all! Tonight I tried her crustless bacon & broccoli quiche recipe. I just made a couple small changes and added a simple crust. This quiche is SO good! Thanks Aunty Kare!

Low Carb Broccoli Quiche

  • 1¼ cups almond flour
  • ¼ cup parmesan cheese
  • ¼ teaspoon sea salt
  • ¼ teaspoon onion powder
  • ½ teaspoon baking soda
  • ¼ cup grapeseed or canola oil
  • 1¼ cups low fat half & half
  • 5 large eggs
  • ½ cup shredded sharp cheddar cheese
  • 1½ cups broccoli
  • 6 slices of turkey bacon, cooked and chopped
  • 1 teaspoon of minced garlic
  • Salt and pepper to taste
  1. Preheat oven to 350 degrees.
  2. Whisk together the almond flour, parmesan cheese, salt, onion powder and baking soda.
  3. Stir in the oil and until dough is formed.
  4. Press into a greased 9 inch pie pan and bake for 12-15 minutes.
  5. While that's baking, saute the broccoli with a little olive oil for about 6 or 7 minutes, or until just tender.
  6. Cook bacon in a separate skillet.
  7. Once the crust is cooled a little bit, add the broccoli and chopped bacon to it.
  8. In a large bowl, whisk together the eggs, cheese, half and half, garlic, salt and pepper.
  9. Pour egg mixture over the broccoli and bacon.
  10. Cook at 375 degrees for 35 minutes, or until eggs have set.

Eating low carb has not only helped me reach my goal weight, but it has given me so much energy and improved my symptoms of Polycistic Ovarian Syndrome!       • Thank you, Hannah! Ah, I see the 3g net carbs note now. 🙂 It’s very inspiring to hear your story – and congratulations on all the progress you’ve made! Though this change definitely feels unfamiliar to me so far, it’s also great to see so many resources, especially in the form of blogs, that offer creative options with surprisingly manageable prep, and I’ve been enjoying the challenge and variety. I’m vegetarian, so these kinds of dishes can be great allies. I’ll let you know how this one turns out for me!
