Since my husband is not a low carb, gluten free eater, it can definately be a challenge to find meals that work for both of us. That’s why I’m always trying to find things to trick him with; things that he can’t tell are healthy. The low carb chicken bacon ranch pizza we had last Friday for date night was a perfect example of that! While it’s not the same as the typical white flour pizza made with yeast, my husband absolutely loved this! My inspiration for this recipe came from The Gluten Free Almond Flour cookbook. I added the parmesan romano cheese and the italian herbs to add nice texture and flavor. This pizza crust is so delicious and comes together in to time!
- 1¼ cups almond flour
- ¼ cup parmesan romano cheese
- ¼ teaspoon baking soda
- ¼ teaspoon salt
- 1 large egg
- 1 tablespoon grapeseed oil (or oil of choice)
- 1 teaspoon dry italian herbs
- Preheat the oven to 350 degrees.
- In a large bowl, whisk together the almond flour, cheese, salt, baking soda and herbs.
- Add the egg and oil and stir with a fork until mixed.
- Use your hands to evenly spread dough onto a well greased pizza pan or cookie sheet.
- Bake for 10-15 minutes, until lightly golden.
- Add toppings of choice and bake at 400 degrees for another 10 minutes or until cheese melts.
This crust would taste great with any toppings you want! We topped ours with homemade ranch dressing, shredded chicken, turkey bacon, shredded pepperjack and shredded mozzerella cheese (in that order). I cooked about 5 pieces of turkey bacon until crispy, then broke them into pieces. For the chicken, I just used a store bought roasted chicken and shredded about a cup. I made my own ranch dressing to avoid any additives or MSG that comes in the store bought ranch. Store bought buttermilk has more carbs since it’s made with regular milk. To cut down on carbs I make my own buttermilk by adding 1 tablespoon of lemon juice to one cup of half and half; let sit for 10 minutes.
Easy Buttermilk Ranch
1/2 cup regular or light mayo
1/3 cup buttermilk
1 clove garlic, minced
1/4 teaspoon onion powder
salt and pepper to taste
Combine all the ingredients in a food processor.
Last night I made two different pizzas with this recipe, for dinner with my parents. Just wanted to share that they turned out delicous!!
The first pizza I made was for my mom and I, and I topped it with pizza sauce, sauteed mushrooms, sauteed spinach, and feta cheese. It was soo good! The second pizza I made for my husband and my dad, and I topped it with pizza sauce, ground beef, shredded pepper jack, and shredded mozzerella cheese. The boys loved it! This pizza crust is so easy and tastes great with any toppings.
